This pic is ok, nothing great in my opinion. Needs to have more definition and sharpness.

I just wish I could reduce the DOF with the lens on the S7000 :\ Sometimes it's great, other times like now it's a pain.

The longer the focal length, the shorter the DOF for a given aperture. So, if you zoom in and step back a bit that should give you your shallower DOF.
As for the sharpness, i like it as it is. The flower has a soft, dreamy quality, almost like a painting.

Yeah you're totally right and I think that I should take a couple of minutes to really think about what I'm doing before that shutter relase gets pressed.

Yeah, I have to say I'm never satisfied point & shoot macros (past models and present).

I think the DoF here would be fine if some portion of the main flower was sharper, but who's to say it has to be sharp..?
